PASSO DEI GRECI
The name comes from the places where, in ancient times, the Greeks used to stop in their travels from the Ionian to the Tyrrhenian Sea. In these places they are growing up the beautiful vineyards.

- Grapes: Mantonico 70% 30% Greco bianco.
- Vines: The blend of this wine is made up of two ancient native vines: Greco bianco, typical of the Calabria Ionian coast, and Mantonico, typical grape of the Tyrrhenian coast. Both varieties are bred in the winery of Carolei, Fondo Canale, at a height of mt. 650 above see level.
- Soil: clay and limestone.
- Training system: Spurred cordon of sixths of narrow installation with a number of plants per hectare of 7,000.
- Harvest: End of September regarding both varieties.
- Harvesting method: By hand, in small boxes and selection of grapes in the vineyard.
- Yield per hectare: 80 quintals per hectare after thinning.
- Winemaking: Fermentation at a controlled temperature of 16-18° C after racking of the must only by an enzyme.
- Alcohol content: 13.5% degrees
Serving temperature and food pairings
Serve at a temperature of 10.8°C. It goes well with dishes of fish and white meat.
